Among consumers who purchase baked and snack goods, it seems there are five trends that stand out in the sector according to recent reports.  Surveys have found that consumers are looking for baked goods and snacks that are healthy, resealable, available in single-serve packs, offer a variety of flavors, and combination snacks.  These trends fall in line with results from a PMMI report, "Snack Foods - Packaging and Processing Market Assessment and Trends."

 
Overall, it looks as though millennials are spurring these trends, considering they comprise 40% of the workforce in the U.S. currently.  According to the findings, healthy snack options is at the top of the list among those between the age of 18 and 34.  It is anticipated that in the bakery and snack market, fruit and nuts/seeds snacks will account for more than a quarter of the market by 2025.
 
Retailers are looking to exploit the single-serve trend, requesting smaller packages so that it's possible to put more on display on store shelves as younger consumers continue the single-serve, better-for-you trend.
 
Millennials are also wanting combination snacks that are resealable, allowing them to enjoy fruits, cheese, meats, vegetables and other items without having to either eat the snacks all at once, or discard unused portions.
 
With younger consumers desiring single-serve packs on one hand and combination snacks that can be resealed and finished at a different time on the other, CPGs face a growing number of operational challenges.  Considering all of the various flavor and packaging size trends in the bakery and snacks sector, CPGs are likely looking at investing in new machinery in the near future - equipment that provides faster speeds, flexibility and more without slowing down production lines in an effort to run all of the various products.
